Instructions
Roast the vegetablesPreheat the oven to 425°F (220°C).Arrange the butternut squash, red bell pepper, onion, and carrot on a large baking sheet. Drizzle with 2 tablespoons olive oil and season with salt, black pepper and smoked paprika. Toss well and spread the vegetables into an even layer.Cut the top off the garlic head to expose the cloves. Place it cut-side up directly on the baking sheet, without wrapping it in foil, and drizzle the exposed cloves with a little olive oil.Roast for 35–45 minutes, turning the vegetables once halfway through, until the squash is tender and the vegetables have deep golden-brown, caramelized edges. The garlic should be soft and golden. If the garlic starts browning too quickly, remove it from the oven while the vegetables finish roasting.
Combine the vegetables and stockSqueeze the roasted garlic cloves from their skins into a large pot. Add the roasted vegetables and stock.Bring to a gentle simmer and cook for 5 minutes.
Blend until smoothUse an immersion blender to purée the soup directly in the pot until completely smooth and silky.Alternatively, carefully blend the soup in batches in a high-speed blender, then return it to the pot.Add the butter and ¼ cup whole milk and blend again until smooth and velvety. Add more milk, a little at a time, if you prefer a thinner consistency.
