Fudgy Sweet Potato Brownies

I didn’t expect these sweet potato brownies to become my favorite brownies I’ve ever made, but here we are. I’ve tried plenty of classic brownies, and I still love a good traditional, deeply chocolatey brownie—but these surprised me.

The sweet potato makes the brownies incredibly moist and fudgy without giving them a strong sweet-potato flavor. Instead, you get a rich chocolate brownie with the most subtle caramel-like sweetness.

And there was a moment while making them when I knew I was onto something.

When I whisked together the mashed sweet potato, melted butter, brown sugar, granulated sugar, eggs, and vanilla, the mixture smelled exactly like caramel. It wasn’t just sweet—it had that warm, buttery, almost toffee-like smell that made me want to taste the batter immediately.

I wasn’t expecting that at all.

That caramel note actually stays in the finished brownies. They’re still very much chocolate brownies, but there’s a subtle caramel flavor underneath the chocolate that makes them taste a little more interesting than a classic brownie.

My husband actually said he likes these even more than the classic version, which is probably the best review I could get. And honestly, I agree with him.

Why I love these brownies

The texture is the first thing you’ll notice. They’re fudgy, dense, and soft in the center, rather than cakey. The sweet potato adds just enough moisture to keep them that way, while the cocoa powder and chocolate chips make sure they still taste like proper brownies.

I also love that you don’t need anything complicated to make them. There’s no mixer, no melted chocolate to fuss with, and no special technique. You just mix the wet ingredients, combine the dry ingredients, fold everything together, and bake.

The hardest part is probably waiting for them to cool.

Don’t overbake them

If you’re looking for that fudgy texture, this is important: don’t wait for a clean toothpick.

When these brownies come out of the oven, the edges should be set while the center still looks slightly soft. The toothpick should have moist crumbs attached to it.

They’ll continue setting as they cool, and this is when the texture really comes together. If you want them especially dense and fudgy, pop them in the refrigerator for about an hour before slicing.

I actually think they’re even better the next day.

How to Make Fudgy Sweet Potato Brownies

1. Prepare the pan and oven

Preheat the oven to 350°F (175°C). Line an 8-inch (20-cm) square baking pan with parchment paper, leaving some overhang so you can easily lift the brownies out later.

2. Mix the wet ingredients

In a large bowl, whisk together the mashed sweet potato, melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and well combined.

3. Combine the dry ingredients

In a separate bowl, whisk together the cocoa powder, flour, baking powder, salt, and espresso powder if using.

4. Combine the batter

Gently fold the dry ingredients into the sweet potato mixture. Stop mixing as soon as you no longer see streaks of flour. Overmixing can make the brownies less tender.
Fold in the chocolate chips or chopped dark chocolate.

5. Bake

Spread the batter evenly into the prepared pan and smooth the top.

Bake for 25–30 minutes, or until the edges are set but the center still looks slightly soft. A toothpick inserted into the center should come out with moist crumbs attached, rather than completely clean.

A simple way to use sweet potato

I like recipes where an ingredient has a purpose beyond simply being there, and that’s what the sweet potato does here. You don’t add it because you want a sweet-potato brownie that tastes like sweet potato. You add it because it gives the brownies moisture, richness, and that lovely fudgy texture.

These are the brownies I now make when I want something a little different from the usual classic brownie—and, apparently, they’ve managed to replace the classic version in our house.

  • 1 cup (225 g) cooked, mashed sweet potato 
  • 1/2 cup (115 g) melted unsalted butter 
  • 1/2 cup (100 g) packed brown sugar 
  • 1/4 cup (50 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract 
  • 3/4 cup (75 g) unsweetened cocoa powder
  • 3/4 cup (95 g) all-purpose flour 
  • 1/2 tsp baking powder 
  • 1/2 tsp salt
  • 1/2 cup (85 g) chocolate chips or chopped dark chocolate 
  • 1/2 tsp espresso powder optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8-inch (20-cm) square baking pan with parchment paper. 
  • Mix the wet ingredients. In a large bowl, whisk together the mashed sweet potato, melted butter, brown sugar, granulated sugar, eggs, and vanilla until smooth. 
  • Mix the dry ingredients. In a separate bowl, whisk together the cocoa powder, flour, baking powder, salt, and espresso powder, if using. 
  • Combine. Gently fold the dry ingredients into the sweet potato mixture until just combined. Do not overmix. 
    Fold in the chocolate chips or chopped dark chocolate. 
  • Fill the pan. Transfer the batter to the prepared pan and spread it into an even layer. 
  • Bake for 25–30 minutes, until the edges are set but the center still looks slightly soft. A toothpick inserted in the center should come out with moist crumbs, not completely clean. 
  • Cool completely. Let the brownies cool completely before slicing. For an extra-fudgy texture, refrigerate for about 1 hour before cutting.
